Ingredients and nutrition
Heres what I included in this recipe or what you need to make these baby friendly pancakes! – just 4 ingredients and you are away.

Flour
Use plain self raising flour for more lift. Flour is a good source of carbohydrate (energy) and some protein.
Egg
I used a medium free range egg. An excellent source of protein, b vitamins, iron and choline.
Milk
Whole milk is preferable for babies under 1 year. Cows milk or an alternative would work. High in protein, fat and calcium
Blueberries
You can use fresh or frozen. If using frozen then you will need to defrost them first. They are sweet and sometimes a bit tangy. A great source of fibre and antioxidants.

How to make healthy blueberry pancakes
Step 1 Measure the flour into a small bowl and crack the egg into the middle.

Step 2: Whisk together to form a thick batter – it may form a lump but it will get softer when the milk is added.
Step 3: Measure the milk and gradually add to the batter, whisk well to remove the lumps.
Step 4: Chop the blueberries into quarters and add to the batter.

Step 5: Heat a little oil into a frying pan and add a tablespoonful for each pancake (makes about 8).

Step 6: Cook for about 3 minutes on each side or until little bubbles start to form. Then flip over and cook until golden and firm.
Step 7: Remove from the pan and leave to cool.
Step 8: Decorate as desired. You can use edible pens for drawing treasure, biscuit crumbs for sand etc. Let them get as creative as they like.
Variations
Dairy free – you can substitute the cows milk for any dairy alternative and instead of the egg, use 1 tsp baking powder to give rise.
Flour – For more fibre, use wholemeal flour or a mix of half white self raising flour and wholewheat flour. You may find they don’t rise as much with wholemeal flour so i recommend adding 1/2 tsp baking powder.
Oats – For more texture and fibre blitz 25g oats to make an oat flour and 25g self raising flour
Different fruits – Other berries will work as long as they are chopped up small such as blackberries, raspberries or strawberries.

Recipe FAQ
How do I store?
Once they are cool you can store them in the fridge for about 3 days. Place in an airtight container to keep them dry.
If you wish to freeze them, then again place them in an air tight container or a sealed storage bag for up to 3 months.
How do I reheat?
You can reheat straight from the fridge or freezer.
Microwave on a defrost setting for about 15 seconds or warm for 10 seconds.
Oven cook for 5 minutes at 170c
What do I serve to babies and toddlers?
Baby led weaning
6- 9 months – For baby led weaning these can be cut into strips – finger size strips so they are easy for your baby to hold.
9 months + – at this age they should have started to master the pincer grip. Therefore if they are ready then you can cut the pancakes into smaller pieces for them to pick up.
Blueberry pancakes for toddlers
These can be served just as they are.
